DAHI BHINDI



INGREDIENTS:-
  • 250 gms Okra/Bhindi
  • 2 cups Yogurt/curd
  • 1 tsp crushed Ginger
  • 1 dry red chilli
  • 1/4 tsp Mustard seeds
  • 1/4 tsp Cumin seeds
  • 1/2 tsp Chat masala
  • Salt to taste
  • Oil as required
  • 2 stalk Curry leaves
  • 1/2 tsp Sugar
  • 1 tbsp chopped Corrainder leaves.



METHOD:-
  1. Wash and cut the okra/bhindi of length 1 cm.
  2. Heat oil in a pan and deep fry the bhindi for 6-8 minutes or untill tendered.
  3. Then transfer the fried okra into a bowl.
  4. Beat the curd gently and add salt, sugar, chat masala, corrainder leaves and mix well.
  5. Again heat 2 tbsp oil in a pan add mustard seeds, cumin seeds, dry red chilli and allow to temper.
  6. Then add the curry leaves and crushed ginger and saute the seasoning for 1 minute.
  7. Now put the seasoning in the curd mixture .
  8. Then put the fried okra/bhindi into the curd mixture and mix well.


VEG MOMO

Veg momo



INGREDIENTS:-
  • 2 cups All purpose flour(maida)
  • 2 tbsp Oil
  • 1 Carrot(grated)
  • 1/2 cup Shredded cabbage
  • 1/4 cup chopped Cauli flower/broccoli
  • 1 Onion(finely chopped)
  • 4 cloves crushed Garlic
  • 1 tbsp Olive oil
  • 1/2 tsp ginger paste
  • Salt to taste
  • 1/4 tsp Black peeper powder



METHOD:-
  1. Mix maida, salt, oil and little water to prepare soft dough.
  2. Then keep aside the dough for 30 minutes, to keep moisturize the dough sprinkle little oil over the dough.
  3. Heat olive oil in a pan add ginger paste and crushed garlic and saute for some seconds.
  4. Now add the grated carrots, shredded cabbage, chopped cauliflower/broccoli, chopped onions and cook untill vegetables are tendered.
  5. Then add black peeper powder and salt into it and remove from theow to prepare flame.
  6. Remember the filling must be dry.
  7. Then take ping-pong sized dough and make balls of it.
  8. Roll it out into small pooris.
  9. The edges must be thin, so that it would help to seal the momo properly.
  10. Place little amount of filling in the middle, then fold the edges and seal the dumplings.
  11. You can fold it in any way in which you are comfortable.
  12. You can also make it in any shape and size of your desire.
  13. Heat water in a steamer and then steam the dumplings for 10-15 minutes in a steamer.
  14. When the momo's are completely steamed up they look little bit transparent.
  15. Serve hot with garlic sauce or spicy sauce.

VEG PAPRIKA

INGREDIENTS:-

  • 200 gm Cauliflower
  • 200 gm Onion
  • 100 gm Capcicum
  • 50 gm Green peas
  • 75 gm processed cheese
  • 3 tbsp Paprika powder
  • 30 ml Olive oil
  • Salt as per taste
  • 3 tbsp Peeper
  • 4 Bread slice
  • 2 tbsp Lemon juice
  • 2 tbsp chopped Ginger
  • 10 Garlic flakes (chopped)
  • 1/2 cup White sauce

METHOD:-
  1. Fill a bowl with water, add cauliflower florest and lemon juice.
  2. In a large fry pan in medium heat add olive oil.
  3. Add bread slice and fry untill crisp and golden brown on both sides.
  4. Remove bread from pan and break into pieces and blende in a food processor.
  5. Then aad paprika to oil and cook over low heat for some time to release fragrance.
  6. Add water and bring to boil.
  7. Drain cauliflower and add to pan.
  8. Season with a little salt and cook uncovered, untill cauliflower is tendered.
  9. Mean while add chopped ginger and garlic into the mixture.
  10.  Then add capcicum, onion, and green peas.
  11. Stir to mix and cook for 5 min over low heat to blende flavours.
  12. Then add white sauce, peeper.
  13. Finally add blended bread slice and processed cheese.
  14. When cheese melts veg paprika is don, transfer it into serving bowl and serve hot.
